Warm Winter Comfort Food: Beef Stroganoff

When I was a kid I hated beef stroganoff. Then, about 15 years ago, while on bedrest, I had a friend bring me a meal of beef stroganoff…and I fell in love. I’ve been making this recipe ever since. It is so delicious and easy.

Cut sirloin (enough to feed your family) into strips and toss in a bowl with minced garlic. I usually do about 3 cloves worth. Throw in 6 T. of flour, 1 t. salt, 1/2 t. pepper, and 2 t. paprika and toss your sirloin strips until they are nice and coated.

Brown meat in about 4 T. oil of your choice. I used virgin coconut oil the last time. When it is browned on the outside (NOT fully cooked!) add some chopped onion. I usually throw in a whole onion’s worth of chopped onion. Add a can of Beef Consomme’ (I need two cans for my amount of beef) and some sliced mushrooms.

I used to leave the mushrooms out because my husband did not like them. But now I have kids that love mushrooms…and so do I…so I put them and let picky people pick them out. I really love portabello mushrooms for the flavor…but you can use any mushrooms you choose.

Simmer on low heat for 1 1/2 hours. It gets “fall-apart” tender while it does this. The smell will drive you crazy it is so fabulous.

At the end, add a cup of sour cream (1/2 cup if you have a small family) and some chives. I only add the chives in the summer…otherwise I forgo them. If you want to thicken up the sauce (I usually do) you can make a mix of flour and water OR corn starch and water and add a little at a time until it is nice and saucy thick.

Serve over flat noodles. You can serve over rice if you prefer. I love the noodles. This is good with cooked peas or a big salad. Crusty bread is nice too.
