Favorite Quick Meal

One of my family’s favorite meals…that is also one of my favorite meals to make because it is pain-free/fast/healthy…is the following.  (I have no name for it…it is just “good meal”….OK?)

2 pound of ground beef browned with onion.  (I buy a bunch of ground beef at one time and brown it all…divide it up into 1 pound portions, freeze it, and have it on hand for these “throw-together” meals.  You can do this whether you have 12 children or no children.)

Throw that into a bowl and add about 24 ounces of tomato sauce, three cans of kidney bean/red beans/black beans or whatever beans you want, about 1/8 cup (or more if you want) of chili powder or taco seasoning, and then put it in a big old casserole dish and sprinkle Corn Chips (all right…so that’s the only unhealthy part…) over the top.  Bake at 350 for about 30 minutes or so.  Serve with shredded lettuce, diced tomato, sour cream, shredded cheese, or whatever else you want.  It makes a yummy taco salad kind of thingy.
